Grown on Ponca with a yield of 1. 5 kg per plant and manual harvesting, it fully expresses the aromatic potential of this grape variety in the exceptional microclimate of Collio. Cold maceration on the skins (8 10C), soft pressing, and controlled temperature fermentation for about 15 days. Aging in steel tanks on lees until the following spring, then resting in the bottle.
